Sweet and sour tofu

Makes one serving.

Ingredients:

150g firm tofu

1 tbsp soy sauce

½ tbsp apple cider vinegar

3 tbsp cornstarch

A handful of chopped peppers (I used frozen)

1/2 onion, chopped

100g pineapple (I used canned in juice)

A handful of broccoli (I used frozen)

Olive oil (to fry)


Sweet and sour sauce:

½ tbsp apple cider vinegar

1 tsp cornstarch

2 tbsp brown sugar

1 tbsp tomato paste

½ tsp soy sauce

3 tbsp water


Optional topping:

Sesame seeds


Method:

1. Mix together the soy sauce and apple cider vinegar in a bowl. Add in the tofu and let rest for 10 minutes.

2. Dust the tofu with cornstarch until all the sides are well coated.

3. Heat a large pan over high heat. Add the olive oil and cook the tofu cubes until the sides are golden brown.

4. Remove the tofu from the pan and set aside. Add the pepper, broccoli, onion and pineapple into the pan over medium heat and cook until golden brown.

5. To make the sauce just mix all the ingredients until well combined.

6. Add the sauce and tofu to the pan and cook until it thickens for around 5 minutes.

7. Serve!


I served it with some rice and topped it with sesame seeds.
