Sesame tofu burgers

Makes two large servings.

Ingredients

280g (1 block) extra-firm tofu, drained and pressed 1 small red onion, thinly sliced 1 tbsp lime juice

2 tbsp vegan mayo 30g panko breadcrumbs 2 tbsp sesame seeds 1 tbsp cornflour 2 tbsp olive oil, for shallow frying 1 tomato, sliced 2 burger buns A handful of coriander, chopped

Salt, to taste

Method

1. Wrap a block of tofu with a few sheets of kitchen paper. Place onto a plate with a chopping board on top and place a few cans of beans onto the chopping board to remove any excess water. Press for at least 30 minutes to an hour.

2. Cut the tofu into 2 equal slices and pat dry again with kitchen paper.

3. Into a small bowl, add the onion, lime juice and some salt. Mix well then set aside. 4. In a shallow bowl, combine the breadcrumbs and sesame seeds. Over another small plate, spread over some cornflour.

5. Dust the tofu slices in cornflour, then brush all over with mayonnaise. Toss the tofu in the breadcrumb mix, making sure all sides are evenly coated. 6. Heat the oil in a large nonstick frying pan over high heat. The oil should be hot before you add the tofu! Fry the tofu slices over medium heat for 2 minutes on each side until crisp, golden and completely warmed through. 7. Assemble the burgers. To the base of the burger bun, place the sliced tomato. Top with crispy tofu, sliced onions and some coriander. Add the bun tops and serve!
