Mediterranean chickpea salad

Makes one large serving.


For the salad

200g chickpeas, canned

1 tsp paprika

1 tomato, diced

1/2 cucumber, diced

1 bell pepper, diced

1 small red onion, sliced thinly

Salt and pepper, to taste

For the lemon-parsley vinaigrette

1 tbsp olive oil

1 tbsp lemon juice

1 tbsp parsley, chopped

1/2 tbsp apple cider vinegar

1/4 tsp chilli flakes

Optional: serve with grilled pitta bread.


1. Rinse the chickpeas then drain. Add the chickpeas, cucumber, pepper, onion, tomato, paprika, salt and pepper into a large bowl and mix well.

2. To make the vinaigrette, combine the olive oil, lemon juice, parsley, apple cider vinegar and chilli flakes to a bowl or blender. Mix/blend well.

3. Add the salad into a bowl and dress with the vinaigrette. Serve with grilled pitta bread!
