Mashed sweet potato breakfast bowl
Makes one large serving.
1 medium sweet potato
30ml unsweetened plant-based milk
1 tbsp peanut butter
1 tbsp maple syrup
1 tsp cinnamon (or to taste)
1/2 tbsp ground chia seeds
1. Preheat the oven to 205°C and line a baking tray with parchment paper.
2. Wash the sweet potato then pierce with a knife all over. Place onto the baking tray then bake for around an hour until tender on the inside.
3. Let the potato cool then scoop out the flesh. Add to a large bowl along with the chia seeds, milk, peanut butter, cinnamon and maple syrup. Mix well until smooth.
4. Transfer to a bowl and serve with the toppings of your choice!
