Cinnamon apple quinoa bowl

Makes one serving.

Ingredients:

Quinoa:

50g (dry) quinoa

130ml plant-based milk

100ml water (more or less depending on how creamy you like it!)

1 tbsp maple syrup

1 tsp cinnamon


Apple topping

1 apple (peeled and chopped)

1 tbsp maple syrup

1 tbsp brown sugar

1 tsp cinnamon


Optional:

15g walnuts

15g sultanas

Extra maple syrup to top


Method:

1. Rinse the quinoa then add into a small saucepan, along with the milk, water, maple syrup and cinnamon.

2. Cook over medium heat for approximately 15 minutes, stirring occasionally until the quinoa is completely cooked.

3. In another small saucepan over medium heat, add the chopped apple, brown sugar, cinnamon and maple syrup. If using walnuts and sultanas add them in too!

4. Cook for around 5-6 minutes, stirring occasionally until the apples are brown and soft.

5. Transfer the cooked quinoa into a bowl and add the apples on top.

6. Serve with extra maple syrup!
