Easiest ever chia jam
Makes approximately 2 cups.
2 cups fruit of your choice (i used frozen raspberries)
2 tbsp chia seeds
2 tbsp maple syrup
1 tbsp lemon juice
1. Heat the raspberries in a saucepan over medium-high heat until it begins to break down.
2. Use a fork to mash the raspberries to your desired consistency.
3. Add the chia seeds, maple syrup and lemon juice and stir until evenly combined.
4. To allow to thicken, remove from heat and allow to cool.
As pictured, I served it with some pancakes, yoghurt, chia seeds and fruit. Its also lovely with homemade scones!
