Basil and spinach pesto
Makes 3 servings.
100g walnuts (or sub pine nuts)
60ml olive oil
10 olives (pitted, i used green)
1 clove of garlic
20g nutritional yeast
1 packed cup basil leaves
1 packed cup spinach
Salt and pepper to taste
1. Put the walnuts into a food processor/blender with the olive oil, spinach, basil, olives, garlic, nutritional yeast, salt and pepper and process/blend into a paste. Taste and add more salt and pepper as preferred.
2. Pour over cooked pasta, give it a good mix and enjoy!
I served it with some pan roasted baby tomatoes, mushrooms and extra basil!
