Apple cinnamon pancakes
Makes 6-8 pancakes depending on size.
Ingredients:

Pancakes
155g flour
3 tbsp brown sugar
1 tbsp baking powder
180ml plant-based milk
1 chia egg (1 tbsp chia seeds and 3 tbsp hot water)
1 tbsp butter (melted)
1 tsp cinnamon
A pinch of salt
Butter to fry
Apple topping
1 apple (peeled and chopped)
1 tbsp maple syrup
1 tbsp brown sugar
1 tsp cinnamon
Optional:
15g walnuts
Extra maple syrup to top
Method:
1. Prepare the chia egg by mixing together 1 tbsp chia seeds and 3 tbsp hot water and allow to sit for a few minutes to become gloopy.
2. To a large bowl, add the flour, sugar, baking powder, cinnamon and salt and mix together.
3. Add in the milk, chia egg and butter and mix well.
4. Over medium heat, heat up a large pan and lightly grease with butter. The pan should be very hot before pouring in the batter!
5. Spoon in some of the batter (about 1/4 cup) into the pan and cook for 2-3 minutes.
6. When edges are dry and bubbles appear on the surface of the pancakes, flip over and cook for another couple of minutes.
7. Whilst the pancakes are cooking, add the chopped apple, brown sugar, cinnamon, walnuts (if you're using them) and maple syrup into a small saucepan over medium heat.
8. Cook for around 5-6 minutes, stirring occasionally until the apples are brown and soft.
9. Stack the pancakes then and top with the apple topping and some more maple syrup if desired.
10. Serve!
